SPAGHETTI MEAT SAUCE







INGREDIENTS:
  • 1/2 lb. bacon
  • 2 1/2 lbs. ground chuck
  • 2 C. chopped onion
  • 1 C. green pepper
  • 6 lbs. 9 oz plum tomatoes (put in blender)
  • 18 oz. tomato paste
  • 1 1/2 C. red wine
  • 1 1/2 C. water
  • 4 t. oregano
  • 4 t. basil
  • 1 t. thyme
  • 1/2 C. parsley
  • 1 bay leaf
  • 2 T. salt
  • 1/4 C. brown sugar
PROCEDURE:


  1. In a 5-6 qt. pan, fry bacon until crisp. Set bacon aside and crumble. Brown ground beef in bacon fat. Add onions and green pepper and cook another 5 minutes. Add the rest of ingredients to the pot and bring to a boil. Add bacon bits. Cook 2 hours.

CHOCOLATE CHIPS







INGREDIENTS :

  • 1 cup butter, softened
  • 1 cup white sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons hot water
  • 1/2 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1 cup chopped walnuts

PROCEDURE:

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream together the butter, white sugar, and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla. Dissolve baking soda in hot water. Add to batter along with salt. Stir in flour, chocolate chips, and nuts. Drop by large spoonfuls onto ungreased pans.
  3. Bake for about 10 minutes in the preheated oven, or until edges are nicely browned.

CHOCOLATE ICE CREAM CAKE








  • INGREDIENTS:

  • 1 (18 ounce) package small chocolate chip cookies
  • 1/4 cup margarine, melted
  • 1 cup hot fudge topping
  • 2 quarts/8cups vanilla ice cream
  • 1 cup whipped cream


PROCEDURE:

  1. Crush half the cookies (about 20) to make crumbs. Combine crumbs with melted margarine and press into the bottom of a 9-inch springform pan or pie plate. Stand remaining cookies around edge of pan. Spread 3/4 cup fudge topping over crust. Freeze 15 minutes.
  2. Meanwhile, soften 1 quart of ice cream in microwave or on countertop. After crust has chilled, spread softened ice cream over fudge layer. Freeze 30 minutes.
  3. Scoop remaining quart of ice cream into balls and arrange over spread ice cream layer. Freeze until firm, 4 hours or overnight. To serve, garnish with remainder of fudge topping, whipped cream and cherries.

CHOCOLATE MOIST CAKE








INGREDIENTS:

  • PROCEDURE:
    1 Beat all together. This will be very thin. Pour in greased baking pan. Cake pans or 9 x13 is what I usually use. or in a round cake pan.
  • 2 Bake 30 minutes at 350. Do not overbake. .Test before removing.

  • DO NOT OVER BAKE!!! OR IT WILL NOT HAVE THAT WONDERFUL MOISTNESS.Top with your favorite buttercream or icing. A lot of times just Whip cream does it for us

EASY FRUIT CAKE










INGREDIENTS:
  • 120g/4oz margarin
  • 170g/6oz Sugar
  • 340g/14oz Dried fruit - this can be a mixture of raisins, sultanas, cherries, peel... whatever you fancy!
  • 225ml/8floz Water
  • 1tsp Bicarbonate of soda
  • 1 half tsp Mixed spice
  • 2 Beaten Eggs
  • 120g/4oz Plain flour
  • 120g/4oz Self-raising Flour
  • Pinch of Salt
PROCEDURE:
  1. Preheat the oven to 350°F/180°C/Gas Mark 4 (the middle bottom right hand oven of a 4-door Aga, if you're that lucky).

  2. Prepare the tin by applying a thin layer of margarine and lining with two layers of greaseproof paper.

  3. Put the margarine, sugar, fruit, water, bicarbonate of soda and mixed spice in a saucepan over a moderate heat. Bring to boil and simmer for 1 minute.

  4. Pour into a mixing bowl and allow to cool1.

  5. Add eggs, flour and salt to cooled mixture. Mix well and pour into prepared tin.

  6. Bake for about one and a quarter hours. You may need to put brown paper over the top if cake starts to singe before it is cooked throughout.

  7. Cake is ready when an inserted skewer comes out clean - leave to cool on a wire rack.

  8. SERVE!

MANGO FLOAT









INGREDIENTS:

  • 1 BIG CONDENSED MILK
  • 1 1/2 PACKS GRAHAM BISCUIT
  • 1 ALL PURPOSE FLOUR
  • MANGO -SLICED
PROCEDURE:
  1. MIX CONDENSED MILK AND ALL PURPOSE
  2. SLICE MANGOES INTO STRIPS
  3. PREPARE THE BISCUITS
  4. POUR THE MILK MIXTURE A LITTLE TO WET THE MOLDER,MANGO STRIPS(RUOGH ESTIMATE)JUST TO TASTE THE MANGO AND LASTLY THE GRAHAM BISCUITS

KUTCHINTA









INGREDIENTS:
  • 1/2 KL. ALL PURPOSE FLOUR
  • 400 G. BROWN SUGAR
  • 2 TBSP. WHITE SUGAR
  • LIHIA -(PEONY BRAND)
  • 7 FULL CUPS OF WATER FOR STEAMER-RICE CUPS
PROCEDURE:

  1. STRAIN ALL POWDER INGREDIENTS BEFORE MIXING ALL INGREDIENTS.
  2. MIX ALL INGREDIENTS
  3. PUT IN A MOLDER 1 BY 1.
  4. STEAM FOR 30 MINS.
  5. LET IT COOL
  6. SERVE WITH COCONUT GRAINS FOR YOUR TOPPINGS
